Rice and Plums tajin

Rice and plums tajin is a widespread Moroccan dish, similar to most of the Moroccan dishes; it is the result of Morocco's interaction with other cultures and nations over the centuries due its' geographic location.

Rice and Plums tajin ingredients:

  • 2 cups AbuKass rice
  • 1 kg lamb muttons
  • 3 tablespoons olive oil
  • 3 pickled lemon
  • 1 tablespoon saffron
  • 1 cinnamon stick
  • ¼ cup chopped coriander
  • ½ cup walnuts
  • Half cup Plums
  • 2 onions
  • ¼ cup minced parsley
  • 2 tbsp. grated fresh ginger
  • 3 tablespoons crushed garlic
  • Salt and pepper as desired
  • ¼ cup rose water
  • ½ cup sugar
  • 1 cup water
  • 6 cups hot water

Method:

Heat butter or oil in a heavy pot and sauté lamb muttons until it becomes golden. In a different pot stir onions over, saffron and spices. Move over muttons.

Cut plums in quarters, add to muttons, then tomato sauce and keep on moderate heat until there is a thick texture.

Move ingredients to oven tray, cover well and cook until the lamb is very tender. Garnish with some chopped coriander and serve with rice.
