Seafood Kabsa

Kabsa is most popular dish in Arabian Gulf region. It is mainly made of rice and meat cooked in a mixture of spices and vegetables. There are many types of kabsa that varies according to added ingredients.

Method:

Clean chosen seafood then season and cook by stir fry or boil like chicken and meat.

In large pan heat oil; cook onions and garlic; cook until tender. Add the rest of vegetables, mix well then add spice mix then tomato paste. Carefully add seafood and stir for about one minute.

Prepare rice pan and cook until rice is almost dry, carefully place seafood mixture on top, cover and reduce to low heat until rice is thoroughly cooked.

Seafood Kabsa ingredients:

  • 2 cups AbuKass rice, soaked for an hour
  • 1K Shrimps
  • 2 fish pieces
  • 1k squid
  • 2 tomatoes
  • 3 tablespoons olive oil
  • 1 teaspoon saffron
  • ⅓ Cup warm water
  • 6 dried lemons
  • 15 grains cardamom
  • 3 chopped onions
  • 3 and half cup of hot water
  • 2 cloves garlic, mashed
  • 3 cinnamon sticks
  • Black pepper and salt as desired
