Mahshi or Stuffed Marrows is zucchini or cabbage, eggplants, potatoes, and other vegetables that are stuffed with rice and meat, flavored with mint and garlic. Originated in Levant where it is still very popular, it is also made in Egypt, Cyprus, and Libya. This dish is served hot as a main course.
Stuffed vegetables Ingredients:
Wash then soak rice in warm water. Meanwhile, core the vegetables thin enough or as desired. Mix rice with meat, oil and desired spices. Stuff zucchini, eggplants and vegetables 3/4 full, add them to prepared pot and cover with tomato sauce. Lay a heavy plate on top of the vegetables, to keep them from moving and opening during cooking. Reduce heat and cook for about 1 hour.
