This rural dish devoted to festive seasons and special celebration consist of rice mixture stuffed in duck or chicken, geese, pigeons or quails. While the Arabic traditional duck rice originates from rural Egypt, it's found in Bolivia, Peru and Portugal.
Traditional Duck Rice ingredients:
2k AbuKass rice
Half kilo livers and kidneys
2 chopped carrots
5 cloves garlic
4 Paper Laurel leaves
2 tablespoons tomato sauce
Vegetable oil as desired
Quarter kilo almonds, raisins and pistachio
Salt and black pepper as desired
Prepare filling ingredients then mix thoroughly with salt, pepper and spices. Mix with rice, and then fill inside the duck. Cook as usual.
