Do you always have leftover rice whenever you make a big meal for your family? Try one of these delicious ways to use leftover rice and make sure it doesn’t go to waste!
1- Transform the rice into a delicious dessert! Rice Pudding is the easiest to make! Requiring only 5 ingredients, this is a sweet treat you can make post-dinner or the day after. You will need:
2 cups cooked long grain rice
2 cups whole milk
3 tablespoons plus 1 teaspoon sugar
⅛ teaspoon salt
1 teaspoon vanilla extract
Whipped cream, optional
In a large saucepan, combine the rice, milk, sugar, and salt.
Cook, uncovered, over medium heat for 20 minutes or until thickened, stirring often.
Remove from the heat; stir in vanilla. Spoon into serving dishes. Serve warm; top with whipped cream
if desired and enjoy
Use the rice for a fried rice recipe. No matter how picky your family is, fried rice with vegetables is always a delicious dish! You will need:
⅓ cup vegetable oil
1 onion, diced
3 cloves garlic, finely chopped
1⅓ cups medley frozen corn, peas, carrots
4 large eggs, lightly beaten
4 cups cold cooked long-grain rice
Heat a large heavy-bottomed nonstick skillet over high heat. When hot, add 1 tablespoon of the oil. Add the onions to the pan, season with salt and pepper, and cook for 1 to 2 minutes until onion is fragrant. Add the garlic stir-fry until fragrant, about 30 seconds. Add the frozen vegetables. Cook until just defrosted but still crisp. Transfer contents of the skillet to a large bowl and serve!
If you are really feeling adventurous we recommend you prepare Arancini balls! You will need:
2 cups cooked white rice, cooled
½ cup grated Parmesan
8 small cubes fresh mozzarella
1 cup Italian-style breadcrumbs
Oil, for frying
1 cup marinara sauce
Place a large, heavy-bottomed pot over medium heat and add enough vegetable oil to rise 4 inches in the pot. Combine the rice, Parmesan, and 1 egg in a medium bowl and use your hands to thoroughly combine the mixture. Form each arancini by taking a small portion of the mixture, squeezing it firmly and stuffing one cube of mozzarella inside each ball. Repeat this process to form 8 arancini. Whisk together the remaining 2 eggs. Dip each arancini in the eggs and then in the breadcrumbs, shaking off any excess. Once the oil reaches 375 degrees Fahrenheit, add 2 or 3 of the breaded arancini to the pot and fry them until golden brown and cooked throughout. Serve hot and enjoy!
