Description

A fresh and exotic rice recipe that will definitely be a change from the traditional rice mix we are all used to. Serve this dish alongside fajita or tacos for the perfect Mexican meal. 

Ingredients Description

4 Cups of Abukass Rice

15 oz canned black beans, rinsed and drained

15 oz can corn, drained

4 fresh tomato, diced

1⁄2 cup red onion, chopped

1⁄2 cup cilantro, chopped

1 jalapeno pepper, seeded and diced

2 tbsp fresh lime juice

1 tbsp olive oil

1⁄2 tsp salt

1⁄4 tsp black pepper, freshly ground

2 dash hot sauce

Preparation

Cook rice the usual way. In a medium bowl, combine black beans, corn, tomatoes, onion, cilantro, jalapeno, lime juice, oil, salt, pepper and hot sauce.

Place a scoop of hot rice in a bowl or on a plate, top with a generous scoop of the black bean mixture and mix it all together before serving.
