Creamy Chicken Rice Soup

Soup is always a good idea, and what better than a rich creamy soup to warm up your soul whenever needed! 

Ingredients Description

2 Cups of Abukass Rice

1 1/2 Cups chopped celery

1 1/2 Cups chopped onion

1 Teaspoon chicken broth powder

2 cans chicken broth

1 1/2 Cups of water

1 Cup of margarine

3/4 Cup all-purpose flour

3 Cups chopped, cooked chicken meat

6 Cups milk, divided

Salt and pepper as desired


- In a large saucepan boil the water and add to it the celery, onions, rice and chicken broth

- Cover and simmer for 30 min or until the rice absorbs most of the broth

- Remove from the stove and set aside

- In a different saucepan melt the margarine and slowly add the flour, then stir until the color turn gold

- Add 4 cups of milk, 1/2 cup at a time, with constant stirring

- Add this mixture and the chicken to the rice mixture and simmer

- If the soup was too thick add some milk or water



Season with salt and pepper and allow to simmer for at least an hour with stirring every 15 minutes.
