Description

A colorful and refreshing bean salad is your healthy choice to enjoy with your family. 

Ingredients Description

2 avocados peeled and sliced

2 cans of kidney beans (400g)

Small red onion, finely sliced

Large bunch coriander leaves roughly chopped

1 cup of cherry tomato, cut in halves

½ tsp cumin

Ready dressing of your choice (e.g. lime & coriander dressing)

1 red chili deseeded and finely sliced (by choice)

Cheddar cheese for decoration

Preparation

- Slice the avocado and place it in a large bowl

- Mix the beans, onion, coriander and tomatoes separately then add them to the bowl with the avocado

- Measure 3 tbsp of the dressing in a different small bowl, then mix it with cumin and chili

- Add the dressing to the salad

Top them all with some grated cheddar cheese
