A favorite recipe for many and a new recipe for others as well, you wouldn’t want to miss the great taste of this delicious dish!
½ Cup of Abukass Rice (washed)
1 cup water
100ml Greek extra virgin olive oil
1 onion, finely chopped
500g baby spinach leaves, washed and finely chopped
Bunch dill, finely chopped
Juice 1-2 lemons
Heat the oil in a large pan, add the onion and gently cook until softened but not colored.
Add the spinach and half the dill. Cook on a high heat, stirring regularly, until the spinach has wilted down and all the liquid has evaporated.
Add the rice and water and leave then until boiling.
Lower the stove and cover the pan and leave it for 25-30 min or until the rice is cooked and absorbed all the water (you can add more water if needed).
Keep it covered for another 15 min to ensure the absorbance of the flavor.
Serve it hot and decorate it with Dill and a squeeze of lemon juice.
