Fluffy Rice Pudding

Ingredients Description

2 cups of Abukass Rice

1/2 Cup Egg substitute

2 1/4 Cups Milk (nonfat)

1/3 Cup Granulated Sugar

1/4tsp Nutmeg

1/2tsp Salt

1tsp Vanilla Extract


Preheat oven to 350. Whisk egg beaters & milk in a med bowl then add sugar, nutmeg & salt. Whisk until sugar is dissolved stir in the vanilla with the mix.

Add rice to egg beater mixture & mix well. Pour the mix into lightly greased custard cups. Place custard cups in a baking pan. Add enough hot water to baking pan to submerge about 1/2 of the baking cups. Do not get any water inside the rice mixture.

Bake for 40 min or until set around the edges.

Remove from oven & let stand in hot water to keep warm or remove & cool before serving.


Serve cold with hot drink and pinch of cinnamon on top.
