Jollof Rice

Jollof means one pot in the Wolof language (a popular language of Senegal, Gambia, and Mauritania), an old-style African dish that could be cooked in different ways, and it features cooking all ingredients in one skillet.

This nutrient dish is spread at West Africa.

There are many variations of Jollof rice, the most common contains rice, tomato paste and onions, combined with beef or chicken.

Serves: family of 4 persons

Ingredients Description
  • 4 Cups AbuKass rice
  • 1½ Chicken Broth
  • 6½ Water
  • 4 Tomatoes, chopped
  • Cup chicken breast, cut up
  • Onions, chopped
  • 5 Cloves garlic, minced
  • Tbsp. turmeric, ground
  • 2 Tbsp. fresh ginger, grated
  • Tbsp. Nutmeg powder
  • Tbsp. red pepper
  • Tbsp. Cumin
  • Strands of saffron
  • Salt & Pepper as desired
  1. In large skillet heat oil over high heat, add the chicken and cook until well done.
  2. Reduce the heat; add the onion and garlic and cook until tender, stir occasionally.
  3. Add the tomatoes and cook for another 2 minutes. Add in the rice, then saffron and spices, pour water and broth then heat to a boil.
  4. Reduce the heat to medium, cover lid and cook for 30 minutes or until the rice is tender.

Pour in serving dish, highly recommended to be served with green salad.
