2 cups of Abukass Rice
3 chicken breasts skinned and chopped
2 tbsp oil
2 onions, sliced thin
1 piece ginger grated
1 red bell pepper, cut thin slices
4 cups chicken broth
¼ cup red beans (optional)
¼ bunch coriander
- In an average pot heat the oil and add the onion, ginger, chili and spices toss them all together for 5 minutes and then add the chicken, rice and toss 2 additional minutes.
- Add the broth and let it boil then reduce the heat and cover the pot and cook for 10 minutes until rice is cooked. And before the rice dries out add the beans.
You can decorate the dish with chopped coriander leaves and serve with yogurt.
